Oat Pancakes

Ive been craving alot of different thing during this pregnancy like cheese, peanut butter, corn and watermelon. But my lastest craving has to be pancakes, I found this breakfast oat pancake recipe over at Chelsea Sugar and they turned out really yummy plus I felt abit better about eating these cause they have oats in them. I also added a teaspoon of vanilla and cinnamon for abit more taste, next time I might add mashed banana to the mixture for a Banana cinnamon oat pancake Yum!.

Oat Pancakes

4 eggs
2 cups milk
2 cups self-raising flour
1 cup oatmeal
1/2 cup Chelsea Soft Brown Sugar
Maple Syrup or Golden Syrup to serve

Mix all the ingredients in a food processor or bowl until a smooth, 'spoonable' batter is formed. Add a little extra milk if too thick. Grease a non-stick frying pan and pre-heat pan over a medium heat. Drop in tablespoons of the mixture, cook for 2 or 3 minutes on either side until golden brown. Stack pancakes on a warmed plate and cover with a clean tea towel to keep warm. Delicious served with golden syrup or Maple Flavoured Syrup.

Crumb Cake

What better way to spend a long weekend then in the kitchen trying out new recipes. I decided to make a Crumb cake since I've been wanting to make one for a while now. When I went to America Crumb cake was everywhere, especially in New York, they even serve it for breakfast and sometimes call it coffee cake or New York crumb cake. Most crumb cake recipes just have the crumb topping but this recipe also has a cinnamon and brown sugar layer in the middle, delicious. If you love cinnamon then you will love this cake.

Hope you are all having a nice break over the long weekend.

Happy Baking

Crumb Cake
Recipe source: Cannella vita

Crumb Topping
1 cup all purpose flour
1 cup packed brown sugar
1 ¼ tsp cinnamon
½ cup (113g) butter, softened

Cinnamon Sugar
1/3 cup brown sugar
¾ tsp ground cinnamon

Cake
¾ cup (170g) butter, softened
1/3 cup packed brown sugar
½ cup white sugar
2 eggs
1 tbsp vegetable oil
1 ½ tsp vanilla extract
2 cups all purpose flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
1/3 cup buttermilk (yoghurt works too)
1/3 cup milk

1. Preheat oven to 325F (165C).
2. Make topping by combining the flour with the brown sugar and cinnamon in a medium bowl. Mix in the softened butter and use your hands to combine until the mixture is crumbly and has the consistency of moist sand.
3. Make the cinnamon sugar that will go in the middle of the cake by combining the light brown sugar with the cinnamon in a small bowl.
4. In a large bowl, cream the butter and sugars with an electric mixer for 1 minute. Add the eggs, oil and vanilla and mix until fluffy. Add the buttermilk and milk and mix well.
5. In a separate bowl, combine the flour, baking powder, baking soda and salt. Combine this dry mixture with the wet mixture and mix well.
6. Spoon half the mixture in a 9 x 13 inch greased, floured baking pan ( I baked mine in a silicone cake ring). Sprinkle cinnamon sugar over the batter and pat it down into the batter. Spread the rest of the batter over the cinnamon-sugar.
7. Sprinkle on the crumb topping evenly over the batter.
8. Bake for 50-55 minutes or until the edges just begin to turn light brown. Cool and slice into 12 pieces.

Banana Crumb Muffins

I'm always on the look out for different Banana recipe as I get a bit bored of the old Edmond's banana cake, which is a great recipe but I like to try out new recipes when I bake just to give myself more of a challenge. I made these Banana Crumb Muffins last night with a bunch of overripe bananas I had. These muffins would be nice served with cream or yogurt on top (which I didn't do cause I couldn't wait to try them straight from the oven and burnt my mouth) so If you have any great banana recipes you would like to share I would love to try them out.

Apple Charlottes

Ive been meaning to post this for awhile but been very busy this week, these Apple Charlotte's are very yummy and a great winter dessert. This is Little and Fridays recipe but I used store bought pastry instead of homemade, slack I know but store bought is so much easier and still taste great.

Apple Charlottes
Treats From Little and Friday

1 Recipe Sweet Pastry
8 Apples
juice of 1 lemon
125g unsalted butter
1/4 cup caster sugar
1 tsp cinnamon
seeds of 1 vanilla pod( I used Vanilla Extract)

For the Apple Charlotte Filling
On a lightly floured bench, roll pastry to 3mm thick and line either one 28cm round tin or six 6cm round tins. Trim pastry to form a neat edge and keep left overs for lattice work. Place lined tin/s in freezer.
Preheat oven to 180c. Place a try in oven to heat.
Peel, core and quarter apples. Cut into 1cm cubes and toss in lemon juice to prevent from browning.
In a saucepan melt butter and sugar, stirring regularly. Add apple cubes to melted butter and stir continuously over a med-high heat. When apple is tender, add cinnamon and vanilla, stir to combine and remove from heat. Leave to cool.
Remove cases from freezer and fill with cool apple.
Roll left over pastry to 2mm thick and cut into long strips, make a lattice top.
Bake on oven tray 45 mins , until golden brown and pastry is cooked through.
If you aren't cooking peeled apples immediately, cover in water and lemon juice until ready to use. When cooking apples, aim for tender, not mushy, texture.

3 Cookies 1 Dough

I felt like some home baked cookies but couldn't be bothered making them from scratch. I found three sheets of sweet shortcrust pastry in the freezer and whipped up these sweet buttery cookies in minutes. These cookies are perfect for filling the kids lunch boxes or if you have someone coming over for coffee. I made 3 different cookies using the same dough, you can use store bought like I did or make homemade dough.

Quick Cookies

3 sheets sweet shortcrust pastry
1/4 cup Nutella
1 tbls cinnamon
1 tbls sugar
24 Dark chocolate buttons

Take your pastry sheets out of the freezer, let them soften up slightly, this wont take long.

Pre-heat oven 180 C.
For the nutella cookies Take one pastry sheet and spread the nutella over the pastry, take the side closes to you and roll it into the middle. Then take the other side and roll that into the middle, place into the freezer while you prepare the other pastry.
For the Cinnamon cookies take a pastry sheet and sprinkle over the sugar and cinnamon then roll as you did the nutella cookies, place in the freezer. For the chocolate button cookies take the last pastry sheet and use a round cookie cutter and cut out pastry circles and place in a greased mini muffin tin. Place a chocolate button on each pastry circle. Take the nutella and cinnamon cookies out of the freezer and cut into a good size and place flat down on a cookie pan. Place all cookies into a pre-heated oven and bake for 12mins. Once done cool slightly, I like them straight out of the oven when there nice and hot or if you can wait there nice and crispy once there cooled.  Frozen pastry sheets are so versatile you can use what ever fillings you want just use your imagination.
