This banana bread is lovely and moist but its even better the next day when the flavours have had a chance to get to know each other. The recipe asks for molasses but golden syrup works just fine.
Banana & Oat Bread

1 1/2 c plain flour
1/2 c rolled oats plus 1 extra tablespoon
1 tsp each: baking powder, baking soda, mixed spice
125g butter
3/4 c brown sugar
2 eggs
1 tbsp molasses or golden syrup
2 ripe bananas, mashed
1/2 milk
pre-heat oven to 175c. Line or grease a loaf pan.
Cream butter and sugar until light and fluffy add eggs and molasses, beating well between each addition. Fold the creamed mixture together with the dry ingredients, then combine the mixture with the mashed bananas and milk. Spoon batter into the loaf pan and sprinkle over the extra oats.
Bake for 45-50 minutes until cooked right through.
