These double chocolate muffins are great lunch box fillers and are so simple to make, the kids will love them.
Double Chocolate Muffins
3/4 cup cocoa
1 tbls baking powder
1 tsp baking soda
1 tsp salt
3/4 cup white sugar
125g butter, melted
2 eggs
1/2 cup milk
1/2 yogurt (or you can use sour cream)
2 tsp vanilla extract
1 cup chocolate chips, extra for sprinkling on top.
Pre-heat oven to 190c
Grease or line your muffin tins.
Whisk together dry ingredients. In a separate bowl combine wet ingredients. Add wet ingredients to dry ingredients mix until mixture just comes together. Fold through chocolate chips. Spoon batter into muffin tins and sprinkle extra chocolate chips on top. Bake for 10-15minutes.
