Classic Self-saucing Chocolate Pudding.


The winter weather is finely here in Auckland after our beautiful long summer, so I thought it would be nice to make a classic Chocolate Self-saucing pudding to warm up our tums.

Classic Self-saucing Pudding

1 1/4 cups self-raising flour
3 tbls cocoa
Pinch salt
1/2 cup sugar
80g butter, melted and cooled slightly
3/4 cup milk
1 egg, room temperature 
1 tsp vanilla
1/2 cup chocolate chips

Topping
1/2 cup each: white sugar and brown sugar
2 tbls cocoa
1 1/2 cups boiling water

Pre-heat oven to 180C
Sift the flour, cocoa, salt and sugar into a large bowl. In a separate bowl Whisk together butter, milk, egg and vanilla. Poor wet ingredients into dry, mix until you get a smooth batter. Stir in chocolate chips then poor batter into a greased dish smooth top with a spatula.
To make topping, combine the sugars and cocoa. Sprinkle the topping over batter then pour the boiling water evenly over sugar mixture.
Bake for 25-30mins
Serve pudding hot with cream or ice cream.
