Feta and Spinach Savoury Muffins


Perfect for lunch or afternoon tea, give these a try next time you have family or friends over they will be very impressed.


Feta and Spinach Savoury Muffins

4 Eggs
1/2 cup canola oil
1 1/2 cups milk
2/3 cup grated tasty cheese
75g feta roughly chopped into 1/2 cm chunks
4 cups self-raising flour
1 red onion, finely diced
3 tomatoes, diced
1/2 tsp chicken stock powder 
1 cup finely chopped spinach
1/2 tsp each of salt and pepper 
Heat the oven to 180 degrees.

Either butter normal or large Texas muffin trays, or line them with squares of baking paper 
Whisk together all the wet ingredients until combined. Sift the flour into the mixture and add the tasty cheese, onion, tomatoes, spinach and salt and pepper (to taste) and fold gently into the wet ingredients. Spoon mixture into the muffin trays and bake for approx 20-25 minutes until cooked.

You should definitely use cupcake liners or baking paper with this recipe as there is a lot less mess to clean up afterwards.

Yummy Double Chocolate Muffins

        

These double chocolate muffins are great lunch box fillers and are so simple to make, the kids will love them.

Double Chocolate Muffins

2 cups flour
3/4 cup cocoa
1 tbls baking powder
1 tsp baking soda
1 tsp salt
3/4 cup white sugar
125g butter, melted
2 eggs
1/2 cup milk
1/2 yogurt (or you can use sour cream)
2 tsp vanilla extract
1 cup chocolate chips, extra for sprinkling on top.

Pre-heat oven to 190c
Grease or line your muffin tins.
Whisk together dry ingredients. In a separate bowl combine wet ingredients. Add wet ingredients to dry ingredients mix until mixture just comes together. Fold through chocolate chips. Spoon batter into muffin tins and sprinkle extra chocolate chips on top. Bake for 10-15minutes.

Banana Crumb Muffins




I'm always on the look out for different Banana recipe as I get a bit bored of the old Edmond's banana cake, which is a great recipe but I like to try out new recipes when I bake just to give myself more of a challenge. I made these Banana Crumb Muffins last night with a bunch of overripe bananas I had. These muffins would be nice served with cream or yogurt on top (which I didn't do cause I couldn't wait to try them straight from the oven and burnt my mouth) so If you have any great banana recipes you would like to share I would love to try them out.

Banana Crumb Muffins

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup (75g)butter, melted

Crumb Topping
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

Crumb Topping: In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Easy Banana Muffins Egg-free

These easy banana muffins are lovely and light and perfect for using up neglected bananas. Make egg-free by using egg replacer. 

Banana Muffins Egg-Free 
Recipe Adapted from Chelsea


  • 1 1/2 cups standard flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 large bananas, mashed
  • 3/4 cup of Chelsea White Sugar
  • 1 egg or 1 tsp egg re-placer + 2 tbls water
  • 1/3 cup butter, melted

Preheat oven to 175°C. Coat muffin pans with non stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt. Set aside. Combine bananas, Chelsea White sugar, egg, and melted butter in a large bowl. Fold in flour mixture, until just combined and moistened. Scoop into muffin pans.

Bake mini muffins for 10 to 15 minutes, and large muffins for 20 to 25 minutes.
