Strawberry Shortcake Cupcakes


I made Miss Melicious Strawberry cupcakes over the weekend for my Nieces 5th Birthday, all I can say is Yum!



She has some really cool cupcake recipes in her new book like bubblegum, creamsicle, fuzzy Navel and more.
I made a mixture of two Dollicious for the cake and Strawberry shortcake for the frosting and topped them off with a white chocolate high heel.



Dollicious Cupcake

Makes 12
125g butter,softned
1 cup white sugar
1 large egg
1 tsp vanilla
1 1/2 cups plain flour
1 1/2 tsp baking powder
1 cup milk

Strawberry Shortcake Frosting

125g butter, softened
4 cups icing sugar, sifted
2 tbsp milk
1 tsp strawberry extract
2 tbsp Strawberry jam or what ever berry jam you have
(I also added 2 drops of pink gel colour to make it abit pinker)

Pre-heat oven to 180c
Line a cupcake pan with liners. Cream butter and sugar until light and fluffy, about 5 minutes. Add eggs and vanilla and beat well. Combine dry ingredients. Add to batter in thirds alternately with milk. Begin and end with dry ingredients. Mix well after each addition. Fill liners two-thirds full and bake for 18-20 minutes or until tips spring back when touched gently.
Cool in pan for 5 minutes, then remove and cool completely before frosting.

For the Frosting: Beat butter and slowly add icing sugar until crumbly. Slowly add milk, extract and jam until the desired consistency is reached. Add more milk if required. Beat for 3-5 minutes until light, fluffy and creamy, but still firm enough to pipe.



The cupcakes went well with the Purse Birthday Cake I also made.

Miette


Look what I'm Reading!. I requested this book at the library last week and it arrived today, I'm so excited about this book and cant wait to dig into it. I just love the look of the cake on the front cover, just a simple cake to make but it looks so elegant.



 If you haven't heard of miette before I'm telling you you need to look it up, its such a cute looking bakery in San Fransisco, That I would like to visit one day. If i ever owned a bakery I would want it too look just like miette. 


I've had a quick flick through the pages and saw a beautiful Coconut Mousse cake which I cant wait to make. I'm having a cake stall at a local Kura to celebrate Matriki this weekend, so I think I'll make then.
 

 So keep an eye out for lots of other treats I'll be baking over the next few days.

Book's I'm Currently Reading

I love buying new cookbooks, but find it gets quite expensive. So lately I've been borrowing recipe books from my local library, the one thing I like about getting cookbooks from the library is when you come across a page that's covered in bits of flour and other bits of ingredients from the recipe, I think to myself, the last person who borrowed this book must of tried this recipe and I wonder how it turned out for them. That's what I love about library books how we can share them and pass them on to the next person. Next time I might leave a little post it note by a recipe Ive made just to let them know if its any good or not.

Here's what I'm currently reading.


Debbie Brown's Enchanting Magical Cakes.

This book is filled with beautiful Enchanting cakes from Cinderella, a Sea Witch and a Sleeping Dragon there is an amazing variety to choose from. Debbie Browns cake designs cater to both beginners and more experienced cake decorators, with step by step guides through the book. I highly recommend this book if you make a lot of kids cake.


Jade Liptons Cakestar

This is also a great cake decorating book. Ive always liked Jade Liptons work after she judged New Zealands Hotteset Home baker in 2011 she shared some great masterclasses.


The Treasury of New Zealand Baking

I love this book its filled with Kiwi classics like Pavlova and Ginger Crunch and recipes from great New Zealand bakers like Jo Seagar and Alison Holst.

Little and Friday Lemon Tarts

If you havent got your little and friday book yet make sure you go get it they have some delicious recipes in the book. I made the lemon Curd from the book and it was perfect for the Lemon tarts I made for Morhers Day. If you havent been to little and friday cafe you should check it out next time your near Devonport or Newmarket.

Lemon Curd Recipe
Little and Friday, Kim Evans

125g unsalted butter
1cup sugar
Juice and zeat of 4 lemons
3 large eggs

Place all ingrediants except eggs in a metal bowl. Place bowl over saucepan of simmering water and stir until sugar has dissolved completely. You can check this bu rubbing a small amount of mixture between your fingers. It is not ready if the mixture is still grainy. Remove from heat. In a separate bowl beat eggs with electric mixture. Add butter and sugar mixture to eggs and beat until combined. Poor mixture through a strainer to remove zest.
Place mixture back over simmering water and cook slowly until think enough to coat a spoon. Place in fridge keeps for up to 3 weeks.

Sweet Shortcrust Pastry
Little and Friday, Kim Evans

2 3/4 cups Flour
1 cups Icing Sugar
Pinch of salt
250g unbutter, well chilled and roughly chopped
1 Egg
1 tsp lemon juice
1/2 tsp lemon zest
Vanilla essence
( you can use salted butter just opt out the extra salt)

Place flour and icing sugar in food processor. With motor running, drop butter in piece by piece until mixture resembles coarse crumbs. Add egg, lemon juice, zest and vanilla and pulse until pastry fos a ball. Wrap in glad wrap and keep in fridge or freezer until ready to use.
Makes one 28cm round tart.
