This recipe makes a very large cake that has a lovely texture and is very moist. It is great for birthdays and family gatherings
Banana Chocolate Cake
200g butter,softened
1 cup brown sugar
1 cup white sugar
3 eggs
1 cup plain yoghurt
1 tsp Vanilla extract
1 cup (2-3 banana's) mashed banana
3 cups self-raising flour
1/2 cup cocoa
1/2 tsp salt
1 tsp baking soda
1 1/2 cups boiling water
Chocolate Icing
3 cups icing sugar
2 tbls cocoa
2 tsp butter,melted
hot water for mixing
Pre-heat the oven to 180c. Line a 26cm or 28cm cake tin with baking paper.
Beat butter and sugars until pale and creamy. Add eggs, one at a time, beating well after each addition. Stir in yoghurt, vanilla and banana. Sift flour, cocoa and salt together and gently mix into cake mixture. Lastly add baking soda dissolved in boiling water. Pour batter into cake tin. Bake for 1 hour or until skewer inserted in the centre comes out clean. Cool 10 minutes in the tin before turning out to cool completely on a wire rack.
To make the icing, combine icing sugar, cocoa, butter and enough hot water to make a spreadable consistency. Ice cake when it is cold.
